  Beef and Garden Vegetables Stir Fry
[ Serves 4 ]
 
  • 1 lb. Certified Angus Beef ® top or bottom round steak
  • 1 (1 to 1-1/4 oz.) package dry Teriyaki or Oriental seasoning mix
  • 1/4 cup sesame oil
  • 1 medium yellow squash, cut into 1/4 x 2-inch strips
  • 4 green onions, chopped (including tops)
  • 4 ounces whole fresh green beans, snapped into 2-inch pieces
  • 2 medium carrots, peeled and cut into 1/4 x 2-inch strips
  • 1 Tbsp. cornstarch dissolved in 1/4 cup water
 
1.   Cut steak across the grain into 1/4 x 2-inch slices. Mix marinade with water according to package directions. Pour over meat in a shallow glass bowl and marinate for 15 minutes, stirring frequently.
2.   Remove beef from marinade using a slotted spoon; discard marinade.
3.   Heat sesame oil in nonstick skillet. Add beef and stir-fry over high heat for 2-3 minutes. Add vegetables and stir-fry for 3-4 minutes. Add cornstarch mixture, stirring constantly for an additional 2-3 minutes or until vegetables are crisp-tender.
4.   Serve immediately over Chow Mein noodles or cooked rice.

  Beef with Pastry Cut-outs
[ Serves 4 ]
  • 1 lb. Certified Angus Beef ® chuck roast, cut into 1/2-inch cubes
  • 1 box refrigerated pie crust
  • 1 pkg. brown gravy mix
  • 1/2 cup hearty burgundy wine
  • 1/2 cup water
  • 1 tsp. butter
  • 1 (10 oz.) bag frozen mixed vegetables
  • 12 small pearl onions
  • 1 tsp. chopped fresh rosemary
  • 1 tsp. chopped fresh parsley
 
1.   Cut holiday shapes out of pie crust and bake according to package directions.
2.   Place gravy mix in small bowl; gradually stir in wine and water. Set aside.
3.   Melt butter in large nonstick skillet; brown beef cubes over medium-high heat for 2 to 3 mintues. Add vegetables and onions; cook 2 to 3 minutes, stirring occasionally.
4.   Add gravy mixture and rosemary; bring to a boil. Reduce heat to low; cover and simmer 30 minutes, stirring occasionally.
5.   Stir in parsley and serve over long grain and wild rice. Place holiday pie crust shapes on top and garnish with sprig of rosemary.
